ingredients - serves 6

  • tablespoons olive oil
  • medium onion, diced
  • garlic cloves, finely chopped
  • teaspoons tomato paste
  • red capsicum seeded and diced
  • teaspoon paprika
  • teaspoon cumin
  • teaspoon chili powder
  • Roma tomatoes, finely chopped
  • large eggs
  • pepper, to taste
  • small bunch fresh cilantro, chopped
  • small bunch fresh parsley, chopped
  • cup Greek style yogurt
  • Flatbread or Crusty bread to serve

method

  1. Heat olive oil in a large fry pan on medium heat. Add the chopped onion and capsicum and cook for 5 minutes or until the onion becomes translucent and capsicum softens.
  2. Add garlic and spices and cook until aromatic, followed by the tomato paste.
  3. Add the tomatoes and juice into the pan and break down the tomatoes using a large spoon. Season with salt and pepper and bring the sauce to a simmer.
  4. Use your large spoon to make small wells in the sauce and crack the eggs into each well.
  5. Cover the pan and cook for 5-8 minutes, or until the eggs are done to your liking. Dollop with yogurt, garnish with chopped cilantro and parsley and serve with flatbread or crusty bread.
