Easter Feasting

If there's ever a time to indulge in your favourite foods it’s Easter! 🐰

We've curated some of the tastiest recipes to inspire a very delicious long weekend of feasting. Whether you're entertaining your family or enjoying a weekend of self-care, these recipes are set to satisfy.
 

Prawn Pinchos


PRAWN PINCHOS WITH SMOKY MAYONNAISE

🍴 Serves 8 - 10 🍴

Prawn Pinchos Ingredients 🦐

  • 1 tbsp of olive oil - Woolworths
  • 24 large green prawns, peeled - Woolworths
  • 1 baguette, thinly sliced - Bakers Delight
  • Handful of rocket leaves - Marketplace Fresh
  • Flat-leaf parsley, to garnish - Marketplace Fresh
  • Fresh oregano, to garnish - Marketplace Fresh
  • 3 tbsp of whole egg mayonnaise - Woolworths
  • 1 garlic clove - Marketplace Fresh
  • 1/2 tsp hot smoked paprika - Graina Bulk Foods
  • 1 tbsp of lemon juice - Marketplace Fresh

Prawn Pinchos Method 🦐

Add prawns to hot pan, add a little oil if necessary, cook for only a couple of minutes until just turned opaque and a little charring, Remove from pan.

In a griddle pan, lightly toast the baguette slices for 1-2 minutes on each side or until lightly scorched.

Meanwhile, for the spicy mayonnaise, combine all the ingredients together, then season to taste.

Spread some of the mayonnaise on each slice of baguette, then top with a piece of chorizo, a prawn, parsley and oregano. Then secure everything with a toothpick.​
 

 

WONTON RICOTTA, FETA & SPINACH RAVIOLI

🍴 Serves 2 - 4 🍴

Ravioli Ingredients 🍝
 
  • 2 - 3 cups of baby spinach, rougly chopped - Marketplace Fresh
  • 1/2 a bunch of basil, washed, picked and rougly chopped - Marketplace Fresh
  • 250g danish feta cheese - Gourmet Deli House
  • 250 g ricotta cheese - Gourmet Deli House
  • 1/4 cup grated parmesan cheese - Gourmet Deli House
  • Zest of 1 fresh lemon - Marketplace Fresh
  • Fresh cracked black pepper, to taste - Woolworths
  • Approx. 2 small packets of wonton wrappers - Yahweh Asian Grocer
  • Water, for sealing the wrappers
     
Ravioli Sauce Ingredients 🍝
 
  • 5 diced, very ripe roma tomates - Marketplace Fresh
  • 1 clove garlic, crushed - Marketplace Fresh
  • 2 - 3 tablespoons of extra virgin olive oil - Gourmet Deli House
  • 1/2 a bunch of basil, washed and picked - Marketplace Fresh

Wonton Ricotta, Feta & Spinach Ravioli Method 🍝

On medium heat, wilt the spinach in a tablespoon of water for one minute, then remove from heat, and carefully press out excess moisture with a paper towel, and leave to cool on a plate.

Combine in a bowl the feta, ricotta, parmesan, basil, lemon zest and pepper and thoroughly mix until creamy in texture, then mix through cooled spinach. Set aside.

Lay out about 8 wrappers. Scoop 1 tablespoon of filling into the centre of each wrapper. Brush the edges with water. Lay a second wrapper on top of each ravioli. Press down the edges, sealing the ravioli as well as pressing out as much air as possible from the centres. If desired, cut out the ravioli with a fluted cutter. Repeat process with remaining wrappers and filling.

Bring a large pot of salted water to boil. Cook the ravioli in small batches for about 1 – 2 minutes, or until they float to the top and the wrapper is tender. Remove from water with a slotted spoon and serve hot with desired sauce.

To get timing right, just before boiling the ravioli, make the sauce so that the hot ravioli can be dressed in the pan with the sauce.

Warm the olive oil with the crushed garlic so that it is fragrant but not coloured, add in the chopped tomatoes and cook for a few minutes, season with salt and pepper to taste.

Sauce is cooked only just to warm the tomatoes and keep a vibrant flavour and release some of the juices. Add in the basil leaves followed by the cooked ravioli, gently combine and serve immediately.

Grazing Plate Ingredients 🧀
 
  • 1 mozzarella ball - Gourmet Deli House
  • 2 roma tomatoes or 1 small tub heirloom medley tomatoes - Marketplace Fresh
  • 2 peaches, ripe but firm - Marketplace Fresh
  • 4 ripe but firm figs - Marketplace Fresh
  • 2 large handfuls of rocket - Marketplace Fresh
  • 1 bunch basil - Marketplace Fresh 
  • 8 thin slices prosciutto - Gourmet Deli House
  • 1 qtr wedge Blue cheese - Gourmet Deli House
  • 1 tablespoon honey - Graina Bulk Foods
  • Extra Virgin Olive Oil - Gourmet Deli House
  • Black ground pepper - Woolworths
  • Crusty bread, to serve - Bakers Delight

Grazing Plate Method 🧀

Slice the mozzarella into 8 portions, cut the tomatoes, peaches and figs into quarters.

Pick the basil leaves.

Cut slithers of the blue cheese into 8 portions, best done just out of the refrigerator while still firm.

Assemble all the ingredients on a large platter; start with 1 handful of rocket on the bottom, then arrange the fruits on top, follow by poking bits of basil, prosciutto, mozzarella and rocket in between the fruits – it will look beautiful, vibrant and festive!

Sprinkle with a little rocket and poke in the slivers of blue cheese, drizzle with honey and olive oil and a grinding of black pepper.

Serve with crusty bread.
