Spring racing picnic tips with Archie

Whether you’re trackside or hosting at home, a spring-inspired picnic is the perfect way to go and is simple, fresh and easy to create. This year, Highpoint has your trackside snack needs covered. Luckily for us, Aussie sporting legend, Archie Thompson, stopped by to give us his top recommendations to create a picnic that is as legendary as he is.

Archie’s top tips for trackside snackin’...

“A good race day picnic doesn’t need to be elaborate or expensive. It’s all about keeping it simple, with delicious dishes that will tantalise taste buds, has something for everyone…and is also easy to carry!

Start with the basics
The staple of every stellar spring picnic is a selection of fresh meats and cheeses. In my picnic basket, I always have a selection of cheese, pepperoni and olives. At Highpoint, my go-to is the Gourmet Deli House, it’s the perfect place to pick a quality selection.

Mix it up
To curate a picnic hamper that will be a winner for everyone, try selecting a variety of cooked meats, hard and soft cheeses and different types of olives. Avoid sticking to one of everything and instead pick a mix, so that there’s something for all tastes.

Bread, bread, bread!
A hero of any picnic, there is nothing better than a fresh baguette! It’s versatile and great for pairing with meat and cheese, so you’re going to want to include this in your basket. Head to Baker’s Delight at Highpoint for both quality and fresh baked bread.

Don’t forget your five a day
There’s something special about having a farm-to-picnic feel, and this is where fresh fruits and veggies come in. It’s important to get your five a day, so you’re going to want to head to the fresh food marketplace at Highpoint to take your pick. My favourites to include are strawberries, grapes and cucumbers. They are fresh, light and always a delight!

Nice nibbles are a necessity
In my opinion, nibbles are key to a delicious picnic. Think a mix of dried fruits, nuts and seeds. At Highpoint, I love Graina wholefoods, there’s so much to choose from. And don't forget crackers and dips – Woolworths is the perfect stop for these, as they have a great selection.”
