Ingredients
- 1 tablespoon red curry paste
- ¼ cup natural peanut butter
- ⅔ cup canned coconut milk
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon rice vinegar
- 2 tablespoons water
- ½ teaspoon oil
- 1 tablespoon chopped roasted peanuts plus more for garnish
Serve with seared chicken or fried tofu skewers and lime wedges
Instructions
- Add a dash of oil to a small pot and add the curry paste. Fry for 1-2 minutes to release its aromas.
- Add the coconut milk, peanut butter, soy sauce, sugar, vinegar, and water. Simmer on low-medium heat, continuously stirring.
- Cook down for 5-7 minutes, the sauce will slowly thicken up.
- Once it reaches your desired consistency, note it should be slightly thick but still runny enough to drizzle and fall off the back of a spoon.
- Take if off the heat, add the chopped peanuts and stir through
Serve alongside chicken skewers with a squeeze of lime juice and enjoy your delicious Thai peanut Satay Sauce!
Notes
- Cook on low - medium heat to avoid burning the sauce and ensure to whisk often as it will thicken fairly quickly
- Sauce consistency - you'll want the sauce to still be runny enough to drizzle or dip. If needed, add a dash of extra water to thin it out
- Spice level - adjust to taste and increase the red curry paste if you like it more spicy
- Chopped peanuts - only add these at the end before serving to keep their crunch
- Freeze leftovers - you can freeze any extras in a sealed container or freezer bag for 1- 2 months then reheat straight from frozen or thaw first. You can portion it using an ice cube tray for easy thawing

- For the meatballs:
- 1kg ground beef,
- 1cup breadcrumbs,
- 2 egg,
- 2 cloves garlic (minced),
- 1 medium red chili (chopped),
- ½ tsp salt,
- ½ tsp black pepper,
- 1 tbsp olive oil.
- For the sauce:
- 1 can (850gm) crushed tomatoes,
- 1 small onion (diced),
- 2 cloves garlic (minced),
- 1 tsp fresh oregano,
- ½ tsp sugar,
- 2 tbsp olive oil,
- salt and pepper to taste.
Instructions
- Prep the meatball mix: In a bowl, combine ground beef, breadcrumbs, egg, minced garlic, chili, salt, and pepper. Mix until just combined.
- Shape the meatballs: Roll the mixture into 1.5-inch balls.
- Pro tip: Wet your hands to prevent sticking. You should get about 30-35 meatballs.
- Brown the meatballs: Heat olive oil in a large skillet over medium heat. Brown the meatballs on all sides (2–3 minutes per side).
- They don’t need to be fully cooked—just golden. Remove and set aside.
- Make the sauce: In the same skillet, sauté onion and garlic until soft (3–4 minutes). Add crushed tomatoes, oregano, sugar, salt, and pepper.
- Stir and let it simmer for 5 minutes.
- Combine and simmer: Return the meatballs to the skillet, spooning sauce over them. Cover and simmer on low for 15–20 minutes, until the meatballs are cooked through.

- 1 kg beef tenderloin
- 1 tablespoon neutral oil (vegetable or avocado oil)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon soy sauce
- 1 tablespoon mirin
- 2 tablespoons ponzu sauce
- 1 teaspoon rice vinegar
- 1 teaspoon grated garlic
- 1 teaspoon grated ginger
- 1 tablespoon finely chopped green onions
- ½ cup ice water (for shocking the beef)
Instructions
- Pat beef dry and season with salt and pepper on all sides. Let rest for 15–20 minutes at room temperature.
- Heat oil in a heavy skillet over high heat until smoking hot. Sear beef for 30–45 seconds per side, including the edges, until browned but still rare inside.
- Immediately transfer beef to a bowl of ice water for 2 minutes to stop the cooking process. Remove and pat dry with paper towels.
- Wrap the beef in plastic wrap and refrigerate for 30–60 minutes to firm up for slicing.
- In a small bowl, mix soy sauce, mirin, ponzu sauce, rice vinegar, grated garlic, and ginger to make the dipping sauce. Adjust flavor to taste.
- Unwrap chilled beef and slice thinly (about ⅛ inch) across the grain using a sharp knife.
- Arrange slices on a platter and drizzle with ponzu sauce. Garnish with green onions, sesame seeds, or grated daikon if desired. Serve immediately.
Notes to mention
- Use the freshest, highest-quality beef for safety and best flavor.
- Do not over-sear — the goal is a crisp crust with a rare interior.

- Any herbs - dill, flat leaf parsley, mint, garlic chives, shiso plus more for garnish
- 1 garlic clove chopped
- ½ teaspoon kosher salt or to taste
- 1 tablespoon olive oil plus more for finishing

- Whip ingredients - Add feta cheese, Greek yogurt, lemon zest, lemon juice, fresh chopped herbs, garlic clove, and kosher salt to a food processor and pulse until creamy.
- Drizzle in olive oil and pulse again just until smooth and incorporated. Alternatively, you can use an immersion blender or regular blender. Do not over-mix or the dip will become watery.
- Serve - Transfer the whipped feta to a serving bowl and top with a light drizzle of olive oil, toasted pine nuts, lemon zest, and fresh herbs.
- Serve with your favorite vegetables, pita chips, olives, and more.
- Alternatively, use it as a base for plating protein, like fish, seafood, chicken, vegetables, and more.

- 150 g smoked salmon
- 1 large cucumber cubed
- 4 baby gem lettuce heads sliced
- 5 tablespoons mayonnaise
- 2 tablespoons yogurt
- 1.5 tablespoons ketchup
- Zest of 1 lemon
- ¼ teaspoon Tabasco sauce
- ¼ teaspoon Worcestershire sauce
- Salt to taste
- Pepper to taste
Instructions
1-Prep Ingredients: First, chop the 150 g smoked salmon and 200 g cooked king prawns, setting aside 4 prawns for decoration later. Cube the 1 large cucumber and slice the 4 baby gem lettuce heads to add crunch.
2-Make Sauce: Next, prepare the creamy sauce by mixing 5 tablespoons ricotta, 2 tablespoons yogurt, 1.5 tablespoons ketchup, the zest of 1 lemon, ¼ teaspoon Tabasco sauce, ¼ teaspoon Worcestershire sauce, and a pinch of salt and pepper until smooth.
3-Assemble: Now, fold the chopped salmon, prawns, cucumber, and lettuce into the sauce, ensuring everything is evenly coated. Chill the mixture for 15 minutes to let the flavors meld. Finally, spoon the mixture into glasses, garnish with the reserved prawns and a baby gem lettuce leaf, and sprinkle with extra black pepper for a finishing touch.
